The Burrito Box

Tonight’s meal prep was a home run with my family!  

A tasty spin on The Taco Box, this meal prep is so easy! 

Sticking with The Taco Box recipe, I mixed the beans, and corn with the turkey taco meat, scooped over brown rice, added lettuce, sprinkled cheese… and BOOM!  Dinner is served.  I did reduce the serving size of each ingredient to keep the calories targeted around ~300 per box.  The lettuce adds volume, so I didn’t even notice.

You can swap fresh salsa instead of pico de gallo, add guacamole, olives, greek yogurt, etc.

You can also modify for any food allergies, or sub ingredients for a vegetarian or vegan option.  Use Morning Star veggie crumbles, and prepare same as taco meat.  So good!  …Or just prepare a veggie version with beans, corn, peppers, onions, tomatoes, jalapeños, etc.

You can dream up so many combinations for this meal prep!  

My kids like to eat it with tortilla chips (Tostitos makes Organic Scoops!).

Tonight I ate mine like a salad, with just lettuce (no rice or cheese), to reduce carbs, and calories.   Totally satisfied!

Life hack:  If you have a busy week, then work ahead!  If you know you’ll have extra mouths to feed, or need a mid-week option, but your fridge is already full of tasty goodness…  Prepare your taco meat during your meal prep Sunday, put in a freezer-safe container, and freeze it.  When you’re ready to assemble, defrost, mix with beans, corn, etc. and done!  You’ve just saved yourself about 15~20 minutes of prep time during a busy week.  That is a big deal for busy people!
