I love fried rice! I love Chinese fast food period! But, OMG is there all kinds of wrong in a lot of what you can buy at any local take out chain.
This recipe is super easy, and family friendly. You can customize to your liking. Another quick prep, but yummy dish.
For this prep, since I was planning to make the Breakfast Burritos OMG!, I added enough rice to my steamer for both this recipe and the burritos. The steamer on the Amazon Links Page is awesome!
Ingredients:
- 1 cup of chopped rotisserie chicken breast (skin removed)
- 2 cups of organic brown rice (steamed)
- 4 eggs (I used Egglands’ Best)
- 1 bag organic mixed vegetables (steamed)
- 1/2 sweet onion, chopped
- 1 tbsp olive oil
- 1/4 cup soy sauce
- salt and pepper to taste
To prepare, I started by sauteing the onion in the olive oil (2~3 min). Then I added the steamed mixed vegetables and sautéed a little longer (2~3 min). I pushed the vegetables to the outer edge of my skillet and added the eggs to the center. I scrambled the eggs, and then once cooked soft, I mixed all together with the vegetables. Once mixed, I added the chicken, rice, and soy sauce. Stirring the mixture, until fully incorporated.
Done. Super easy dish! I couldn’t even get boxed up before my kids were in the kitchen eating some.
Modifications: You can always remove the chicken if you wanted a meatless option, or sub the chicken for shrimp, steak, pork. You could also add pineapple if you wanted to add a sweet flavor or add chili sauce or sriracha to make it spicy. You could also be creative with different vegetable options. Completely customizable to your dietary needs.
Prep time ~ 15 min (if brown rice is already steamed).
Calories ~225 per container.
