B.E.C. Breakfast Bars

OMG! do I have a breakfast treat for you!

Inspired by the Breakfast Burritos OMG!, this tasty creation is another make it and freeze it meal prep your whole family is sure to love!  In fact, my daughter ate hers this morning and immediately went to the fridge and opened it.  I asked her what she needed, and she said “do you have any more of this breakfast dish?”, I said, “yes, it’s in the freezer”.  She opened the freezer, and saw the squares and said: “Oh good! because I definitely want to eat more of this!!!”…lol

B.E.C. = BACON!?!?! Egg and Cheese!!!…. yes, I said BACON!?!?!?!

And everything is better with BACON!?!?!?


  • 12 Eggs (I used Eggland’s Best Large Size)
  • 1 can of Pillsbury Reduced Fat Crescent Rolls
  • 3 cups of hash browns (not frozen, I used Simply Potatoes)
  • 6 slices of bacon
  • 1 cup of finely shredded cheese (I used Organic White Cheddar)
  • Salt and pepper to taste

To prepare, preheat your oven to 350 degrees, and lightly grease a 9×13 baking dish.  Cook bacon until crispy, lay on paper towel to drain.  Roll out and press the crescent roll dough into the bottom of baking dish.  Evenly distribute the hash browns on top of the dough.  Beat eggs in a separate bowl, and add seasonings.  Pour eggs evenly over the hash browns.  Crumble cooked bacon over top the eggs.  Bake for ~40 min.  Remove and sprinkle cheese, and place back into the oven until cheese is bubbly (~3 min).

Remove from oven and let cool.  Once cool, divide into individual servings.  Wrap in Glad Press-n-Seal, and freeze.  When ready to eat, warm up in microwave 90~120 sec.

Modifications:  Add or swap out with your favorite veggies, or other meats.

Prep time =  ~1 hour

Calories =  ~280
