This is a yummy vegetarian (or vegan) option.
- 2 portabella mushroom caps (sliced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 yellow onion sliced
- 10 La Tortilla Factory Whole Wheat Tortillas
- 5 Organic Wholly Guacamole Minis
- 1 tbsp Taco seasoning
- 1/2 tbsp Olive oil
To prepare, in a hot skillet, brown mushroom slices and remove. Add a little olive oil, and saute peppers and onions until tender. Add mushrooms back to skillet. Season with taco seasoning, and toss in skillet. Done!
Divide veggies into your containers, add 2 tortillas and a guac mini.
Modifications: You could add-on cheese, lettuce, Greek yogurt, salsa, pico de gallo, jalapeno, etc.
