I’m so HAPPY for a routine again, but with school back in session, that means my kids will be super hungry when they get home…. our schedules are busy, which means hungry kids can’t wait for an hour to have a meal… Meal prep allows me to plan ahead, and then all they need to do is warm it up and enjoy!
Super simple.
Ingredients:
- 2 13 oz packs of Oscar Mayer Selects Natural Smoked Uncured Turkey Sausage
- 3 cups Organic Chicken Broth
- 2 cans of Cannellini beans (rinsed)
- 1 can of diced tomatoes (drained)
- 6 cups of baby spinach (cleaned)
- 1 tsp dried oregano
- 1 tbsp minced garlic
- 1 tsp dried nutmeg
- 1 tbsp of olive oil
- salt and pepper to taste
To prepare,
Sausage prep, I put the smoked sausage in the oven for 15~20 min on 425 degrees to brown on the outside. This is optional. You could slice up and cook in soup, or grill first. I prefer to brown the sausage a little before adding to the soup… adds a deeper flavor.
Once you’ve prepared the sausage, slice into 1/2~3/4 inch slices.
Soup prep, in a soup pot over med/high heat, add olive oil, and minced garlic. Once oil is heated, add spinach and sauté. Once spinach is wilted, add remaining ingredients. Simmer for 10~15 minutes.
