Egg Muffins

The egg muffins were super yummy this morning!  A quick prep, and grab-and-go!!!  You could really be creative with the ingredients!!!


  • 12 eggs
  • 1~2 cups of fresh spinach (finely chopped)
  • 1 cup of fresh baby portabella mushrooms (chopped, I sautéed mine first to remove some of the moisture)
  • 1 cup of Kraft Smoky Bacon Cheddar Cheese
  • 2 slices of bacon (crumbled)
  • Salt and pepper

To prepare,

Preheat oven 350 degrees. 

Mix all ingredients into a bowl. Pour even amount into muffin pan.  Bake for 20 minutes until eggs are set. 

Serve immediately or store in refrigerator. Heat up in microwave ~30 seconds. 

Special Note:  If you have muffin papers, I’d try to use those.  Mine stuck to the pan a little, and it was a bear to clean after. 

Prep time = ~30 min

Calories = ~110 each

# of muffins = 12
