I was craving a quinoa salad, so I decided to switched up the ingredients.
- 1 10 oz bags of Simple Truth Organic White Quinoa -Frozen, already cooked!!
- 2 cups of fresh spinach
- 1 sweet potato (baked and diced)
- 1 avocado (diced)
- 1 lime
- 1/8 cup olive oil
- 2 tbsp honey
- Salt and pepper to taste
Cook quinoa according to directions on package. Mix with spinach, sweet potato. Before adding avocado use some of the lime juice and squeeze over to prevent browning. Then add avocado to the salad.
To make the dressing, mix in a small container with lid the lime juice, olive oil, honey, salt, and pepper. Put lid on container and shake, shake, shake!!!
When serving the salad, drizzle 1 tbsp of a the dressing over the salad. A little goes a long way!!!
Note: you can cook the sweet potato in the microwave. Scrub potato, poke holes with a fork all over, wrap in wet paper towel and place on plate. Microwave on high for 6 min (flip half way through). If it’s a big potato you might need more time (1~2 min) and likewise if it’s smaller, less time.
