Who hasn’t had loaded potato skins with cheese, bacon, sour cream… greesy and not exactly something you’d want to eat on regular basis. I’m getting heartburn just thinking about it!
It’s totally ok to reinvent dishes you enjoy but with a healthy twist.
This is a super easy meal prep.
Ingredients:
- 3 organic sweet potatoes (scrubbed, wiped clean)
- Six cups of organic baby spinach
- ~1 cup mozzarella cheese
- 1/8 tsp or so of garlic powder, cinnamon, nutmeg
- 1 Tbsp olive oil
- Salt & pepper to taste
Prep:
Preheat oven to 400 degrees.
Cut each sweet potato in half lengthwise. Rub each half with olive oil. Salt and pepper the exposed potato side, and place potato side down on a baking sheet lined with parchment paper.
Bake for 25~30 min until sweet potato is cook through.
While sweet potatoes are baking, add spinach to hot skillet with seasonings and sauté until all leaves are wilted.
Once potatoes are ready, take 1/2 potato and put on separate baking sheet. Take fork and loosen the potato slightly…. add 1/6 of the spinach sauté to the potato and sprinkle with mozzarella cheese.
Broil until cheese is melted (~1 min or so).
So good!!!
Calories = ~150 calories
# of containers = 6*
*Depends on if you want to serve as a side to a protein or eat as a meal. It’s pretty satisfying to eat 1 serving (1/2 potato).
