A spin on Chicken “Not Really” Fried Rice.
This was so good! This is a great substitute if you are trying to reduce carbs and increase veggies. The Green Giant Riced Veggies I used are Gluten-Free and 100% vegetable!
Ingredients:
- 1 bag of frozen Green Giant Riced Veggies Cauliflower (~12 oz)
- 1 bag of frozen Mixed Veggies (corn, carrots, peas, green beans)… or any blend you like! (I used SteamFresh ~10 oz)
- 3 eggs
- 1/8 cup soy sauce or stir fry sauce
- 1/2 Tbsp olive oil
- Salt and pepper to taste
You can also use fresh veggies instead of frozen or a combination… onions, garlic, etc. I trialed this as a bonus prep, so I just used frozen for convenience.
To prepare, in a medium-high heated skillet add olive oil, cauliflower rice, veggies, and S&P. Saute until cooked through and starting to brown slightly. I pushed the vegetables to the outer edge of my skillet and added the eggs to the center. I scrambled the eggs, and then once cooked soft, I mixed all together. Once mixed, I added the soy sauce. Stirring the mixture, until fully incorporated.
So easy!!!
