This one is definitely a keeper in the recipe file!
I love tilapia!!! It’s such a mild, tender fish. Add some cheese and pesto… OMG! This one was so good I got a text from my husband saying so… #husbandapproved!!! lol
- 4 Tilapia Filets
- 1/2 cup finely grated parmesan cheese (I used Kroger Brand)
- 2~3 Tbsp of Basil Pesto (I used Kroger’s Private Selection)
- 2~3 organic Roma Tomatoes (diced)
- 1 bag frozen Simple Truth Red Quinoa & Brown Rice with Garlic, Olive Oil & Sea Salt (cooked according to package)
- 1 Tbsp of olive oil
- Salt and pepper
Preheat oven to 400 degrees.
Pat dry each tilapia filet with a paper towel. Place on a parchment-lined baking sheet. Rub with olive oil, S&P to taste. Sprinkle grated parmesan cheese evenly over each filet.
Bake for ~15 min until fish is flaky. Depends on the size of filet. Also, if the cheese isn’t brown, broil for an additional 1~2 min until browned.
Place fish into the bento box. Spread ~1/2 Tbsp or so of basil pesto (a little goes a long way). Top with fresh diced tomatoes. Pair with 1/4 cup of the simple truth quinoa and rice.
Amazing! It reheats in the microwave amazing too!

# of containers: 4~6 (depends on the size of your tilapia filets… mine were a little large, so I divided between 6 containers).
